T-minus 7 shopping days left for Christmas and NYE is in 2 weeks! I've been so Christmas focused and wearing red a tons, that I decided I needed to change it up a bit... so today I'm sharing this blouse from Charlotte Russe! On the website, the blouse is described as yellow, but it definitely looks burnt orange-ish to me...



I paired it with my black moto jacket for a little edge, skinny jeggings from American Eagle Outfitters and black suede booties. Some gold accessories finish off my look!

CUTEST UGLY CHRISTMAS SWEATERS

I bought this cute Santa Christmas Sweater from Target (shh...it's from the kids'section)


I'm so obsessed with Holiday Cheer during the Most Wonderful Time of the Year (see what I did there ;))

I always remember the horrible holiday sweaters that my mother owned and the outfits she put me in as a child, but when Vintage ugly christmas sweaters started trending, I was like oookay, but now there so cute, it's hard to resist wearing a big bright red sweater with a giant reindeer in the middle.

PEPPERMINT BARK MACARONS

There is nothing more classic than Peppermint and Chocolate during the holiday season! If you love Starbuck's Peppermint Mocha or eating Peppermint Bark treats, you'll love this macaron recipe!









Here's what you'll need:


Dry Ingredients:
  • 1 CupAlmond Meal/Flour
  • 1 2/3 Cups Powdered/Confectioner's Sugar
  • 1 Tsp Cream of Tartar
  • 1/2 Cup Semi-Sweet Baking Chocolate/ Chips
  • 1/2 Cup White Chocolate Baking Chocolate/Chips



Wet Ingredients:

  • 1 Tsp Pure Vanilla Extract
  •  3 drops Peppermint Extract
  • 3 Egg whites
  • 1/2 Heavy Whipping Cream
  • 2 Tsp Room Temperature Butter
Tools:

  • Piping Bag
  • Piping Tip
  • Parchment Paper
  • Cookie Sheet
  • Whisk

Step 1:

Sift Almond Flour and Powdered Sugar... This step is particularly important for light and airy cookies



Step 2:

 In a separate Bowl, Beat 3 Egg whites with Cream of Tartar until they are frothy, then add in White Sugar and continue to beat until you form stiff peaks


...these first two steps took me the longest, but they are all the ingredients you need to make the cookies of a macaron!

Step 3;

Add Vanilla and Mint Extracts to Egg White Mixture

Step 4:

Add Egg White mixture to Sifted Almond Flour/ Powdered Sugar Mix, then fold in slow mix... try not to mash them together... carefully fold until your batter has the consistency of lava

Step 5:

Add batter to piping bag and then pipe in small circles onto the Parchement Paper on the Cookie Sheet



Step 6:

Tap the Cookie Sheet a few times to release air bubbles

Step 7:

Patience Required... let macarons sit out for 30 minutes before baking, this a good time to Pre-Heat your oven to 300 degrees

Step 8:

Once macarons are no longer sticky to the touch, bake in the oven for 15 minutes

While Macarons are Baking... Make the Chocolate Mint Ganache Filling

Step 1:

Place Candy Canes in a plastic Bag and Smash into pieces with a heavy object like a rolling pin

Step 2:

Heat Heavy Cream in a saucepan until it boils

Step 3:

Add semi-sweet chocolate to Heavy Cream and stir, let stand for 1 minute and then add butter, candy chips and 3 drops of Peppermint Extract and stir

Step 4:

Place in fridge for 30 minute to allow to thicken

Step 5:

Place in Piping Bag and Pipe onto Macaron Cookies, then sandwich two cookies!

Step 6:

I took an extra step and rolled my Macaron Cookies that had a little chocolate oozing on the sides in the extra peppermint chips!



I also made some homemade Peppermint Bark to pair with my cookies! Why is Chocolate and Mint sooo good?!

The temps have finally dropped below average in Charlotte, and although we still have a couple of weeks of Fall, it's definitely is starting to feel like Winter out!

Today's post is on my new favorite coat from Charlotte Russe! This Gray Anorak is a perfect winter coat, cute and comfy! It actually caught my eye because it reminded me of the Chateau Parka from J.Crew that's super popular but literally a tenth of the price! I know winter coats are great investments, but the Bargain Betty in me, couldn't resist a nice imitation! (You know what they say about imitation and all!)

GRAY SWEATER (DRESS)

Happy Monday!

I've been picked on forever due to me being height challenged... but I have to admit, I love being short! I really do think of myself as fun-sized and although being petite may have its challenges in the fashion world, where all the models are at least a foot taller than me, there are its advantages!

Like...
- shopping the kids section (I love the Girls section of Target)
- always finding my shoe size... ladies with larger sizes seem to always struggle but my size 6 is always there!
- wearing knee high boots as thigh highs
- wearing shirts/ sweaters as dresses


In today's post, I'm taking advantage of my shortness and wearing my favorite OTK boots and Sweater (Dress) from Charlotte Russe... paired with my boots, the sweater is just long enough for me to wear as a dress!











Sometimes it's not so bad to be the Thumbelina Sized!

I hope you're surrounded by people that you're most thankful for! I know people make jokes about 2016 being a rough year, but all jokes aside, I've been thankful for so much this year!

I'm thankful for all things I'm fortunate to have and try to remember that not everyone is as fortunate. I'm thankful for the opportunities that I have been given to further my education and make my dreams become reality. I thankful for my little piece of the internet that allows me to express my creativity and share my aspirations with you all. I'm so thankful for my parents graciously taking me back in while continue my journey to medical school and I'm thankful everyday that I wake up to the present so I continue to plan my future!








Hope you guys have an amazing day, and when you get a moment between turkey and pie, look around and see all you have to be thankful for too!



FUR VEST AND DUCK BOOTS

Happy Wednesday!

I know everyone is excited to have a short week to eat, relax and spend with family for the Thanksgiving holiday! As the holidays quickly approach, and the weather turns cooler, I love to breakout more weather appropriate clothing items, and my Fur Vest and Duck Boots are at the top of the list.

In today's outfit post, I simply layered my faux fur vest over an old J.Crew sweater with some ripped jeans and threw on my Duck Boots! Cute, casual and warm!







Burr... it's chilly this fall!
