PEPPERMINT BARK MACARONS
12:00 AMThere is nothing more classic than Peppermint and Chocolate during the holiday season! If you love Starbuck's Peppermint Mocha or eating Peppermint Bark treats, you'll love this macaron recipe!
Here's what you'll need:
Dry Ingredients:
- 1 CupAlmond Meal/Flour
- 1 2/3 Cups Powdered/Confectioner's Sugar
- 1 Tsp Cream of Tartar
- 1/2 Cup Semi-Sweet Baking Chocolate/ Chips
- 1/2 Cup White Chocolate Baking Chocolate/Chips
Wet Ingredients:
- 1 Tsp Pure Vanilla Extract
- 3 drops Peppermint Extract
- 3 Egg whites
- 1/2 Heavy Whipping Cream
- 2 Tsp Room Temperature Butter
Tools:
- Piping Bag
- Piping Tip
- Parchment Paper
- Cookie Sheet
- Whisk
Step 1:
Sift Almond Flour and Powdered Sugar... This step is particularly important for light and airy cookies
Step 2:
In a separate Bowl, Beat 3 Egg whites with Cream of Tartar until they are frothy, then add in White Sugar and continue to beat until you form stiff peaks
...these first two steps took me the longest, but they are all the ingredients you need to make the cookies of a macaron!
Step 3;
Add Vanilla and Mint Extracts to Egg White Mixture
Step 4:
Add Egg White mixture to Sifted Almond Flour/ Powdered Sugar Mix, then fold in slow mix... try not to mash them together... carefully fold until your batter has the consistency of lava
Step 5:
Add batter to piping bag and then pipe in small circles onto the Parchement Paper on the Cookie Sheet
Step 6:
Tap the Cookie Sheet a few times to release air bubbles
Step 7:
Patience Required... let macarons sit out for 30 minutes before baking, this a good time to Pre-Heat your oven to 300 degrees
Step 8:
Once macarons are no longer sticky to the touch, bake in the oven for 15 minutes
While Macarons are Baking... Make the Chocolate Mint Ganache Filling
Step 1:
Place Candy Canes in a plastic Bag and Smash into pieces with a heavy object like a rolling pin
Step 2:
Heat Heavy Cream in a saucepan until it boils
Step 3:
Add semi-sweet chocolate to Heavy Cream and stir, let stand for 1 minute and then add butter, candy chips and 3 drops of Peppermint Extract and stir
Step 4:
Place in fridge for 30 minute to allow to thicken
Step 5:
Place in Piping Bag and Pipe onto Macaron Cookies, then sandwich two cookies!
Step 6:
I took an extra step and rolled my Macaron Cookies that had a little chocolate oozing on the sides in the extra peppermint chips!
I also made some homemade Peppermint Bark to pair with my cookies! Why is Chocolate and Mint sooo good?!
